Grilled Cheese: Turkey, Mozzarella, Pesto | A Rose in Bloom
Seasonal food is such a treat in so many ways.  Not only is it greener for the planet, but produce always tastes best when fresh. Basil is in season and can be found at most farmer's markets.  What to do with it?  Make delicious pesto, of course.  It is great on salads, bagels, pasta, and grilled cheese.  Yes, grilled cheese.  Here is what we made.



Grilled Cheese with Pesto and Smoked Turkey

2 Slices sourdough bread
2 tablespoons homemade pesto (I like this recipe.)
3 Slices smoked turkey
Mozzarella to taste
Butter, for the bread
1 tablespoon olive oil, for the pan

Heat oil in pan.  Smother pesto on the bread, like you would butter or mayonnaise.  Gently lay the turkey onto one side of the bread, and place the mozzarella on top of it.  Place other piece of bread on top. Butter both side of the sandwich, and grill to perfection! Yum!
